Flank Steak Fajitas

Here's a picture of what WAS inside my crock pot. It's all gone now. The whole house smelled wonderful. I love coming home from work to a meal all ready and waiting! I need to dig out some more crock pot recipes. Fall is just around the corner and there are so many wonderful warm, hearty recipes I love to use!

Flank Steak Fajitas

1 1/2 lb.-2 lb. steak cut into strips
1 10 oz. can tomatoes and green chili's
2 cloves garlic, minced
1 T. fresh cilantro, minced
1 tsp. chili powder
1/2 tsp. cumin
1 onion, sliced
1 red pepper,julienned
1 green pepper, julienned
1 yellow pepper, julienned

Place the beef strips in a slow cooker. Mix the rest of the ingredients except the peppers and pour over the beef. Cook on low for 6-7 hours. Add the peppers and cook 1 hour or until they are tender. Serve on flour tortilla's with cheese and sour cream.

  2. You're right - it's the perfect time of year for the crock pot! We do lots of tailgating so we use it a ton in the fall! Love coming home to meals too, where the whole house smells like you've been in the kitchen all day long!
