Lemon Lover's Cookie Recipe


Lemon Lover Cookies? Well, I'm a lemon lover!

Of course I HAD to try them! Well...ya sure you  betcha...{Minnesota slang} they were good and FULL of lemon flavor. Rich, buttery, lemon goodness. Any lemon lover would LOVE these cookies. I made a batch and brought some over too a couple friends of mine. Don't worry..I left some for my hubby...I don't want any complaining! Those were gone in a flash.


Lemon Lover's Cookies
{Taste of Home}

3/4 c. butter,softened
3 Tbsp. sugar
2 tsp. lemon juice
1 1/4 c. flour
1/2 c. cornstarch
1 tsp. grated lemon peel

Cream butter and sugar until fluffy. Beat in lemon juice. Combine the flour, cornstarch, and lemon peel and gradually add to the creamed mixture. Shape into  a 1/1/2 ' roll, wrap in plastic and refrigerate 1 hour or until firm. Cut into 1/4" slices and bake on ungreased baking sheets for 8-10 min. at 350. Cool completely. Frost.

Frosting:
1/4 c. butter, softened
1 c. powdered sugar
2 tsp. lemon juice
1 tsp. grated lemon peel

I love the looks of these. Did you really use all that butter? How can we make it low cal?
