Taco Lasagna


How many times have I made this? I can't even count.

I have made it for family, for friends, for potlucks, for my son's friends, for parties...I guess you could call this one of my go-to dishes. It never fails to please. It's warm, it's hearty, and most of all it's just plain tasty!

Today I made 2 pans. One to eat and one to freeze.

It's actually kind of sad.

You see, I have been lucky enough to have my son home all summer...and he leaves in a week to head back to Pharmacy school. He was able to get an intern position here at a local Pharmacy. I can't believe how fast the summer flew by. Pretty soon the house will be TOO quiet again with just Brent and I.

Anyway, I am busy making some casseroles to freeze to take back with him. This one freezes well and is one of his favorites. Here's the recipe:

Taco Lasagna

1 lb. hamburger
1/2 c. chopped onion
1/2 c. chopped green pepper
1 envelope taco seasoning
3/4 c. water
1 can black beans,rinsed
1 can refried beans
1 can Rotel tomatoes with green chili's
6 flour tortillas
3 c. shredded cheddar cheese

Brown hamburger, onions. and green peppers. Add taco seasoning and water, black beans and tomatoes. Simmer 10 minutes. Layer 3 tortilla's in a greased 9x13 pan. Spoon 1/2 can refried beans on top. Add 1/2 of the hamburger mixture, and 1/2 of the cheese. Repeat, ending with cheese. Bake at 350 for 20-30 minutes. Let set 5 minutes before cutting into squares.

That's great he was able to do his internship close by, you must be very proud of him! I would LOVE this Taco Lasagna! Great to know it freezes well too

I just found your blog....not really enjoying cooking, your recipes sound (and look) great and I'm excited to try them. Also will tell my daughter who has big sons to feed!!
