Ranch Red Potato Recipe


How about a plate full of these? That's what I had last night! I could eat these every night of the week. With just the two of us now, I really appreciate recipes where the leftovers taste great warmed up the next day. And these DO! We both take lunches to work and... no kidding...we sometimes fight over who gets the leftovers. This is one we fight over. They just taste THAT good!





Ranch Spuds
7 medium sized red potatoes, cubed
3-4 Tbsp. butter, cubed
Place potatoes in a greased 11x7 pan, add butter cubes, cover with foil and bake at 350 until tender. {about 60 minutes}

Mix:
1 c. sour cream
1 envelope dry Ranch mix
Spoon over potatoes and bake uncovered 5-10 minutes until warmed. Top with 1 cup of shredded cheddar cheese, return to oven until melted.

I have a weakness for ranch! Leftovers are so underrated! We love them too, and why not?! They often taste better the next day and are a huge money saver! YUM!
