Almond Wild Rice Recipe


This is another favorite wild rice dish of ours. I really like the nutty flavor...and the cranberries add some color and just a bit of sweetness. This goes well with many entrees, but I like to serve it with turkey. Our local  grocery store has a smokehouse and they make the best smoked turkey. It just melts in your mouth!

I love all the different textures in this dish...the crunchy nuts, soft chewy cranberries, and the fluffy wild rice. Feel free to add more butter..it only makes it better!

Almond Wild Rice

1/2 c. wild rice
1 Tbsp. soy sauce
4-6 green onions, sliced
1/3 c. toasted sliced almonds
1 Tbsp. butter
1/4 c. sunflower seeds
1/4 c. dried cranberries

Boil the rice and soy sauce in 2 cups of water until tender. Saute the onions in butter. Add the seeds, dried cranberries, and almonds to the rice. Stir in the onion mixture. Serves 4.

I love nutty/sweet rice dishes too! This looks super delicious and very healthy! I agree too...would make a great side dish to poultry...anything really!

We tend to forget how important is side dish. It complements the main course. If the side dish is a failure then it completely ruins the main. This one is definitely a winner!

This hits the spot for a side dish. Love it with the dried cranberries and sunflower seeds and it is a must try!
