Minnesota Wild Rice Soup Recipe


In Minnesota you can find wild rice sold everywhere. It's used in many soups, salads, casseroles, and breads. The best kind of wild rice to buy is the hand harvested..it's lighter brown in color and cooks up wonderfully fluffy and delicious. One of my favorite recipes using wild rice is this soup. It's THICK and hardy and warms the soul in this chilly fall weather. {You can thin it out with more broth....but we like it thick} I was visiting blogs today and ran into this soup recipe too. I thought it sounded pretty good...check it out!


Minnesota Wild Rice Soup

1/3 c. wild rice, cooked
2 cans cream of chicken soup
1 small can mushrooms
1/2 c. chopped celery
1/2 c. chopped onion
2 chicken bullion cubes dissolved in 1 c. hot water
1 carrot, sliced thin {I cook them a bit in the microwave}
2 c. half and half
1/4 lb. bacon ,cooked and crumbled

Saute onion in celery in some butter until tender. Add the rest of the ingredients and simmer 1 hour.

Looks beautiful!!!! Soups are one of my favorite things to make and when they have bacon in them...all the better!
