Baking with Dorrie, Brown Sugar Apple Cheesecake



Today's Baking with Dorrie recipe is Brown Sugar Apple Cheesecake and can be found here, or on page 238 of Baking, from My Home to Yours.


I changed the recipe quite a bit. First, I used gingerbread graham crackers for the crust instead of ginger snaps. I had never seen them before and wanted to give them a try. They are awesome for crusts! However just eating them plain...I don't know. The ginger flavor is too strong. I was going to take the leftover packs to school for snacks for the kids but I don't think they would care for them. I 'll still try though and see what they think.

The next thing I did was cut the recipe in half and make just a small cheese cake. I also decided not to do the apple layer. Believe it or not I am not a fan of fruit on my cheese cake. I like it plain.



I love cinnamon and I could really taste it in every rich, creamy bite. This was a fun recipe to try..and we enjoyed it very much!

I didn't know Honey Maid has a gingerbread flavor out--I'll have to keep my eyes peeled for them!!

That's funny - I like my cheesecake plain too! I mean...I'll eat ones that have "stuff" on them but I am a simple, classic cheesecake kind of girl!

I didn't even know there were gingerbread graham crackers. Great idea to use them in the crust. Your cheesecake came out beautifully and I have no doubt that it was like heaven in every bite.

Your cheesecake looks wonderfully creamy!
You must try the apple version - I expected it to be so-so, but the apples taste remarkably good in there.
Incidentally I did mini-versions too and added a pinch of ginger to my gingersnap crumbs since I like things spicier (forgot to mention in my own post). So, send over those gingerbread honey maids will ya? ;-)

I love that you used the gingerbread graham crackers...that sounds fabulous! I agree with Grapefruit regarding the apples...that was the only thing that sounded a bit iffy to me, but it really made the cheesecake that much better. Yours look fabulous...thanks for baking with me!

Ohhh i sooo love cinnamon too , infact im on an overdose of cinnamon and vanilla since thanksgivving!
I think it would be soo delightful to add cinnamon to the cheese cake and some more holiday spices too , the caramel apple suprise is soooo good too!
Pretty cheesecake !

Your cheesecake looks great, even without the apples, which I loved. I could see it made this way, though and I might just try it.

I could not do the crust (forgot to write this) because my hubby can't have it. I made a nut crust just for the top.
