Baked Oatmeal


Today I'd like to share a recipe for low fat baked oatmeal.

I know..the words low fat and oatmeal aren't very exciting...but this was really good!

I've never had baked oatmeal before but I've seen  many recipes for it. I have several copied down, and finally made this one last weekend for breakfast.

I'm glad I tried it! It was delicious. Every bite was full of tender baked apples and cranberries, with cinnamon and maple syrup. I drizzled alittle bit more maple syrup on top of Brent's..he doesn't even like oatmeal..but he liked it this way!

Another bonus...one whole cup was only 224 calories, 2 fat, and 4 fiber!

Low Fat Baked Oatmeal
{Healthy Cooking}

2 c. old fashioned oats
1 3/4 c.boiling water
2 c. fat free milk
1 1/2 c. chopped peeled apples
3/4 c. dried cranberries
1/4 c. maple syrup
1 tsp. cinnamon
1/2 tsp. salt

Place oats in a bowl, cover with boiling water. Let stand  minutes. Stir in remaining ingredients. Bake at 350 in a 11x 7" greased pan. Cover for 40 minutes, uncovered for 10 until bubbly and set.

I have never tried this. It is very tempting though plus healthy!

I love oatmeal and don't eat it nearly enough! Low Fat does excite me when it looks and sounds this good! I am trying to eat healthy in the AM!
