Coconut Candy

I usually make this candy at Christmas, but never got around to it, so I made it for Valentines Day. I sprinkled some tiny hearts on top.

This is one of those recipes that I get requests for often. It is a bit putsy to make, but I enjoy it. This recipe makes a large batch so I have plenty to share with everyone!

Coconut Candy

3 1/2 c. powdered sugar
1 stick softened butter
1 pkg. coconut
1/2 can sweetened condensed milk
1 tsp. vanilla

Mix altogether, refrigerate, shape into balls, and dip in chocolate.

I know just where to go whenever I need dessert/sweet inspiration! Your Rice Krispie Treats inspired me to pick some up the other day and add them to the truffles I made.

These candies are so sweet and beautiful!

If you read the post you will see the recipe with measurements.

Just mix it all together and refrigerate. Then roll into small candy size balls (whatever size you like)and dip in any melted chocolate.

I just use chocolate chips and melt them on a double boiler.I have a candy spoon that helps me dip them, but you could use toothpicks.

Then I set them on parchment paper on a cookie sheet and place in the frig to set.Thats it!

If you have never made candy before, you may want to google it...here is a site I found http://candy.about.com/od/candybasics/a/candy_beginners.htm.

Your recipe looks yummy and I too would like to make this but find the measurements of "one bag of coconut" just too vague as I live in New Zealand and a bag of coconut here may be a totally different size to what it is where you live. Also, butter doesn't come in sticks so I have no idea how much to use of that as well. Would you be able to tell us these amounts in either cups or weight please? Love your recipes! Thanks so much for sharing them.

In the U.S. a stick of butter equates to 8 tablespoons, 1/4 pound, or 1/2 cup, what ever makes it easiest for your use. Most coconut comes in bags of 14 ounces.

I've made these candies before and you can add a bit more butter or condensed milk, or coconut to make the mix the right consistency for you as well.

I hope this helps anyone else who is looking at this recipe.
