Blueberry Bars


Have you ever made the Rhubarb bars with the shortbread crust?

If you have, you know what I'm talking about....because they are so good you can't ever forget them! They are a favorite around here up north.... especially this last month or so with all the rhubarb growing in just about every ones yards.


Well, I came across this recipe and it reminded me so much of the rhubarb bar recipe that I had to give it a try. They were almost the same except the rhubarb is a bit tart while these are very sweet. A sure winner in our book! Brent wants me to make them again and we still have some left..I guess he doesn't want to run out!


Blueberry Bars

1 1/2 c. flour
3/4 c. butter, softened
1/2 c. powdered sugar
Mix and press into a 9x13 pan. Bake at 350 for 10 minutes.

3 eggs
1 1/2 c. sugar
3/4 tsp.baking powder
1/2 tsp. salt
3/4 tsp. cinnamon
1 1/2 tsp. vanilla
1 1/2 tsp. lemon juice
6 T. flour

Mix altogether and fold in:
1 1/2 c. fresh blueberries

Pour over hot crust and bake another 30 minutes.
