Baked donuts..not fried?

So do you like donuts with vanilla glaze or cinnamon and sugar?

I ate one of each.....just for testing purposes, of course. After all, I wanted to be able to tell you which was better.

It turns out they are BOTH good!

Brent preferred the glazed, while I did prefer the cinnamon and sugar.

But, I am a big fan of anything cinnamon, so I guess that was no surprise!

What did surprise me was the taste and texture of baked donuts. I wasn't sure if I would like them. While they don't compete with deep fried donuts...let's face it....NOTHING compares with ANYTHING deep fried......they are delicious!

The texture is more like a cake donut, yet they are not exactly like a cake or a muffin. I was thinking they would just taste like a muffin or something. But they are very similar to the cake donuts the local bakery sells.

I had read many posts about baked donuts on blogs the past few years, and thought they would be fun to try sometime, but I didn't want to spend the money on a pan I wouldn't use that often.

Then few weeks ago I was at a friends rummage sale, and there it was....a donut pan....and only 50 cents!

For 50 cents I figured I could squeeze yet another pan in my cupboards, so it came home with me. ( along with several other items) I dug it out and decided today was the day to try it out!

I found several baked donut recipes I want to try....this one was from the Fake Ginger blog. The photos looked so good I figured they would taste good too.

And they did!

I'm happy with this recipe and the pan. Next time I make 'em, I plan to try icing them with a chocolate glaze, and maple, too. Maybe dip them in some chopped nuts...hmmm....I think this pan is going to get used alot more than I thought!

Baked Vanilla Donuts

1 c. flour
6 Tbsp. sugar
1 tsp. baking powder
1/4 tsp. cinnamon
1/2 tsp. salt
6 Tbsp. buttermilk
1 egg
1/2 tsp. vanilla
1 Tbsp. melted butter

Mix the dry ingredients together, add the wet and stir until blended. Spray pan with nonstick spray and spoon mixture into donut pan. Make sure to fill only half full, you should be able to make 8 donuts. Bake at 325 for 8-10 minutes. Dip in glaze or roll in a mixture of cinnamon, brown and white sugar while still warm.

Glaze:
1/2 c. powdered sugar
1/2 tsp. vanilla
1-2 tsp. heavy cream

Fantastic! I'm way too nervous to use a deep fat fryer in my kitchen, so I love it when recipes are converted to be baked.
