Kokosbollar...12 weeks of Christmas



Kokosbollar {Cocoa Balls} are a popular Swedish candy you often find around Christmas time on goodie trays. They are VERY sweet, somewhat like fudge but not the same consistency.


When I was little, I used to like to go visit the neighbors. One of my favorites was an elderly lady I always called Mrs. T because I couldn't pronounce her name. She kept these in her refrigerator and would always give me one whenever I stopped by. She didn't roll hers in coconut though, but kept them plain.

I found the recipe the other day and decided to make some....they are just like I remembered.

 Sweet and chocolaty!



Kokosballar

1/2 c. butter
1/2 c. sugar
1 Tbsp. vanilla sugar
2-4 Tbsp. cocoa
1 1/4 c. uncooked quick oatmeal
shredded coconut

Mix all the ingredients together except the coconut. Form into 1 in. balls and roll in coconut. Store in the refrigerator.

How funny - I saw that title and was sure it was German. (It happens when I see an unfamiliar long word with double consonants. lol) Swedish? Good grief, why haven't I heard of them before? (being of Swedish and Danish extraction). They look delicious, Laurie! I'll have to add these to my own Christmas baking.

These would be perfect on a holiday tray! They look delightful! I'm afraid they wouldn't last long in my fridge!

My mom lives in a Swedish are in Western New York and I'm pretty sure I've seen these at one or two of her church potlucks. They look gorgeous and I love that they contain oatmeal - I can never get enough oatmeal!
