Candy Cane Brownie Bites 12 weeks of Christmas


Nothing says Christmas like candy canes!

I made my favorite brownie recipe for packing in our lunches this week. But this time, I baked them in mini muffin tins, then dipped them in fudge frosting, and sprinkled them with crushed candy canes.

I was going to add some mint extract to the brownies, but I'm so glad I didn't.  The candy canes on top were just right. The combo of mint with the thick fudge frosting and walnuts in the brownie was delicious!

I bought the candy canes to make some more peppermint melt aways. They are a favorite cookie of ours, and I need to freeze a bunch. But if I keep adding them to everything I bake..... I'll need to buy some more!




Fudge Brownies

Mix and set aside:
3/4 c. flour
1/4 tsp. soda
1/4 tsp. salt

Mix on low heat:
1/3 c. butter
1/2 c. sugar
2 T. water

Add:
6 oz. chocolate chips
1 tsp. vanilla

Stir well and add:
 2 beaten eggs ( make sure to temper the eggs)

Fold in flour mixture and stir well. {I added some chopped walnuts.}Spread into a 9 " greased pan and bake at 325 for 25 minutes. Cool slightly and frost with fudge frosting while still slightly warm.

Fudge Frosting:

3 T. milk
3 T. butter
3/4 c. sugar
1/2 c. chocolate chips
touch of vanilla

Mix the milk, butter, and sugar in a sauce pan and bring to a boil. Boil 30 seconds, remove from heat and add 1/2 c. chocolate chips and a touch of vanilla. Stir until chips are melted and pour over warm brownies. (Mixture will be slightly runny, but thickens as it hardens.}
