Jenny's Wild Rice Stuffed Tomatoes


I promised to post some of the recipes my daughter made for Christmas dinner....here's one of them. They looked so pretty on the plate and tasted amazing. Tomatoes smothered with cheese, crispy bacon and wild rice....they were something special!

I can't wait to make them myself. They would be so easy to have assembled and ready to throw in the oven for company. They look impressive and compliment any meal!




Wild Rice Stuffed Tomatoes

6 tomatoes
1/4 c. wild rice, cooked and drained
6 oz. cream cheese, softened
1/4 lb. bacon, cooked and chopped
3/4 c. shredded cheddar cheese
1 small can mushrooms

Slice the top of the tomatoes, and remove the pulp. Slice a bit off the bottom so they sit well in a glass baking dish. Mix the cooked wild rice, cream cheese, bacon, cheddar cheese, and mushrooms. Spoon into the tomatoes and bake at 350 for 30-45 minutes until browned on top. Yum!
