Ranch potatoes



This is one of our favorite ways to eat potatoes. They're rich and creamy and go well with just about anything.

I've used lite sour cream and cut back on the butter and cheese, and they taste good that way, too. I have also used reds with the skins on to save some time. This time I made them according to the recipe, though.


I usually just make half a batch and that's good for a couple of meals for the two of us. They taste great warmed up!



Ranch Potatoes

7 medium potatoes. cubed ( I used peeled reds}
1/4 c. butter, cubed

Put potatoes in a greased 11x7 in. pan. Dot with the butter and bake at 350 until tender, about an hour.

1 c. sour cream
1 envelope dry ranch mix (I used less)

Mix and spread over potatoes. Top with 1 c. shredded cheddar cheese. Bake uncovered 5-10 minutes until warmed and cheese is melted.
