Grilled Cheese with Bacon and Thousand Island Dressing


This is a recipe I got from my daughter....she found it in a Food Network Magazine, and said I needed to try it.

We all like it...it's a great flavor combo!

I love grilled cheese anyway...who doesn't? Add the bacon....yum...then the dressing...and you have a nice lunch!





Grilled Cheese with Bacon and Thousand Island Dressing

8 strips bacon, cooked
2 Tbsp. unsalted butter
8 slices sourdough bread
12 oz. cheddar cheese
4 Tbsp. Thousand Island dressing (recipe follows)

Heat butter in a skillet, add 2 slices of bread, top with 2 slices bacon and 2 slices cheese. Spread 1 Tbsp. dressing on 2 slices of bread and put on top. Grill both sides until golden brown. Repeat for the other two sandwiches.

Thousand Island Dressing
1/2 c. sour cream
2 Tbsp. mayo
2 Tbsp. milk
2 Tbsp. ketchup
2-4 dashes Tabasco sauce
3 Tbsp. dill pickle relish
dash of kosher salt
2 tsp. Worcestershire sauce

Mix well.
