Jenny's Scalloped Potatoes




These are the KILLER potatoes I was telling you about.....the ones my daughter made over Christmas. If you read my blog, you know I like easy recipes that pack alot of flavor. This is one of those. Tender and cheesy,
they were scrape the bowl good!






Simple Scalloped Potatoes

1 1/2 T. butter, cut into pieces, more for brushing
1/2 clove garlic
2 lbs. russets, peeled and sliced 1/8" thick
kosher salt and pepper to taste
1 1/4 c. low sodium chicken broth
1/2 c. skim milk
1/2 c. Gruyere cheese, shredded (she adds more)
1/2 c. shredded cheddar ( she adds more)

Brush the skillet with butter, and rub with garlic.Add half the potatoes and salt and pepper, put other half of the potatoes, salt and pepper those. Pour broth and milk over all and simmer 3 -5 minutes. Pour half of mixture in a greased casserole, then add half of the cheeses. Pour the other half in and top with remaining cheese. Dot with butter and bake at 350 for 25 minutes or until tender and golden. Let rest 5 minutes before serving.
