Basil Tomatoes


Happy St. Patricks Day!

And what a great day it will be.....warm and sunny are the predictions....and I plan to take advantage of it. For sure I will be grilling all weekend, and also taking some nice long walks along the lake. It's just so hard to believe the awesome weather we have been having, as March in the north is so often cold and snowy. At school this year I have playground duty, and with this weather the kids have been having alot of fun outside. I have also been helping at the after school program, and yesterday I had fun watching them fly kites. I hope this warm weather keeps up! My Birthday is at the end of April and I can remember many years we had to cancel the outside party games when I was little because of SNOW! So one never knows I guess.

Today I'm sharing a simple side dish....it really perks up an ordinary sandwich. I don't know why I don't serve this more often, as it's just so easy and good for you. I usually have this in the summer, but I suppose all this nice weather has me thinking about warm weather recipes already!


Basil Tomatoes

3 pints grape or cherry tomatoes,halved
1/2 c. basil leaves, chopped
1 -2 tsp. olive oil (I used a bit more)
salt and pepper to taste
lettuce leaves

Combine the tomatoes,basil, olive oil, salt and pepper. Refrigerate. Serve on lettuce leaves.

I absolutely love basil and tomatoes! AND this unseasonably warm weather we're having - here in NW Wisconsin too! I'm getting spoiled, I'm afraid, for I don't want things to get back to normal any time soon. :-)
