Mediterranean Chicken Salad



I had some feta and tomatoes leftover from my couscous the other day, so I threw this salad together. I loved it! It was light and refreshing and just perfect after Easter dinner and all the Easter candy I have been snacking on. I love the saltiness from the Greek olives, and the bit of tang from the mustard. I think I'll even have some left for lunch tomorrow!



Mediterranean Chicken Salad
Taste of Home

3 c. chopped cooked chicken
1 1/2 c. chopped tomatoes
1/2 c. feta cheese
1/2 c. Greek olives
 1/4 c. chopped red onion
1/4 c. olive oil
2 T. tarragon vinegar
1 tsp. dried tarragon
1 1/2 tsp. lemon juice
 1 1/2 tsp. Dijon mustard
1/4 tsp. salt
1/8 tsp. pepper

Combine the chicken, tomatoes, cheese, olives and onion. In a small bowl whisk the olive oil, lemon juice, mustard, vinegar, salt and pepper. Toss to coat. refrigerate until serving.
