These sure were super easy and fun to make! I saw the idea on Pinterest...basically it's a dessert pizza except on top of sugar cookies. You can also put a glaze on top, but I decided not too, and they were perfect without. I suppose if the fruit you use isn't very sweet, you would want to put a glaze on top, but the berries I used were sweet enough without.
Of course you can put any fruit on top, I used just the blueberries and raspberries as it was for Memorial Day...I wanted to keep with the red, white, and blue. I meant to make my own sugar cookies, but I got lazy and picked some up at Wall mart. I don't know if they keep very long, as I just made them as I needed them, so they were always fresh.
This would be a fun recipe to make with kids,too!
Fruit Pizza Cookies
4 oz. cream cheese, softened
1/4 c. powdered sugar
1 3/4 c. whipped topping
12 sugar cookies
1 1/2 c. fresh blueberries
1 1/2 c. fresh raspberries
Beat the cream cheese and powdered sugar. Fold in the whipped topping. Spread on cookies and top with fruit. Refrigerate until serving.
