Cake mix cookies



My mom ALWAYS kept a cake mix on hand. Several in fact. She made them often for unexpected company, or to run over to someone who was sick. She was always bringing cakes to church for potlucks, funerals,or meetings. She made her own frosting...my favorite was 7 minute.

I think she would have really enjoyed all the cookies you can make with them, too. There are so many recipes using cake mixes!

I don't use them very often, but like my mom, I always try to keep some on hand. Lucky for me I had a devils food one in my pantry, as I was CRAVING something chocolate. (My cupboards are pretty bare....I need to get shoppin!)  I remembered this recipe using a cake mix and dug it out.

I found some mini chocolate chips in my freezer, about  1/4 cup was all that was left in the bag. I debated if I should just eat them, or if I should make the cookies.

Common sense won out....I mean, I could have a bunch of cookies instead of just the chocolate chips!

So I made them. I even shared them with my hubby who was heading out of town for a few days. And they were so GOOD!



Cake mix cookies

1 package devils food cake mix
2 eggs
3-4 Tbsp. water
3/4 c. mini chocolate chips ( I had to use less)
1/2 c. chopped walnuts

Mix the dry cake mix with the water and eggs. (It will be thick.)  Add the chocolate chips and walnuts. Drop by spoonfuls onto a greased cookie sheet and bake at 350 for 10-12 minutes until set. Cool a few minutes on the pan before removing.

It must be a mom thing....my mom always did too, she always said because you never knew when someone was sick or if someone passed away when you'd need to make a cake to take. Come to think of it...I have a few in my pantry too. I am going to try these! Thanks for sharing!

I have checked several other cake mix cookie recipes, but they all say you must add butter or oil except for yours. Do they really come out delicious without the extra fat?
