Pesto Pitas


I was paging through one of my old Cooking with Paula magazines and saw this simple idea for pesto pitas. They looked so good!

They only had 3 ingredients and I had all three. In fact, I had some pitas leftover from my chicken salad the other day, some of my pesto { recipe here}  frozen in the freezer, and just a bit of Parmesan in the frig.

I threw them together and just minutes later.... I had a perfect lunch! The only thing that was missing was some tomato basil soup to dunk them in. Next time!


Pesto Pitas

4 (6 in.) pita rounds, halved,split and cut into thirds
1/4 c. prepared pesto
2/3 c. shredded Parmesan cheese

Place pita triangles on baking sheets, spread with pesto, then top with cheese. Broil for 1-3 minutes until cheese is melted and pitas are toasted. Serve immediately.

Laurie, these pitas look delicious, like the pesto on it...simple and yet so tasty.
