Egg in a Hole...Mondays with Mom

When I saw this was floating around Pinterest, it reminded my of my mom.

I made one for myself the other day. It was as good as I remembered, and I still had fun eating it just like I did when I was a kid!

Mom was a stay at home mom, and she was always trying to come up with ways to get me to eat breakfast. I just have never been much for eating that early in the morning, but mom would be happy now! I do eat a regular breakfast everyday...even if it is just a banana or cereal.

Back then though, it was a chore for her to get me to take the time to sit and eat before I ran off to school. She would make anything I asked for, french toast, chocolate malt-o-meal....you name it.

 One morning she greeted me with this...egg in a hole. She had seen it in a 4H cookbook. I had to admit it looked interesting, and before long, I was begging her to make it everyday, just so I could drop the egg in the hole!





Egg in the Hole

bread
butter
egg
salt and pepper

Using a round cookie cutter, cut out a circle in a slice of bread. Melt some butter in a pan and add the bread. Drop the egg in the circle, salt and pepper to taste. Fry until golden brown.

That is such a simple and fun thing. I bet my grandkids would love it. They're coming out on Friday. I'll have to try this out on them. :-)

I make these for my kids as well, but I have always called them eggs in a nest.
