Cherry almond ice cream cups


One of my favorite desserts!

I'm a fan of almond flavoring, and I love it with cherries and pecans...mixed with ice cream, it's awesome!



Add some M&M's for a bit of chocolate, and its a perfect dessert.




The original recipe used both red and green cherries, and also red and green holiday M&M's. But we always have so many treats over the Holidays that I never make this then. I just use red cherries and regular M&M's.


These are fun for a Birthday, or any occasion, really. You can make them ahead of time, which is a plus for entertaining!





Cherry almond ice cream cups

1 qt. vanilla ice cream, softened
1/4 c. chopped pecans (I use more)
4 Tbsp. chopped red maraschino cherries
1/2 tsp. almond extract (I use more)
1/2 c. chopped M&M's (I use more)

Combine the ice cream, pecans, M&M's, cherries, and almond extract. Spoon into paper lined muffin cups and freeze for at least 30 minutes.  Garnish with extra M&M's and cherries. Serves 8.
