Monday's with Mom....simple is just the best!


I found some beautiful tomatoes and cukes at the farmers market, so I sliced them up and drizzled them with a simple vinaigrette. Sometimes simple is just the best...and this was!

My mom used to do this all the time. In fact she's send me out to the garden to pick tomatoes and cukes. I didn't really care for them until I got older, but I did like running out to the garden to get them! We always went barefoot most of the summer, or wore those cheap rubber flip flops...we called them thongs. The dirt in the garden was always warm on my feet, and I would be careful to stay in the paths not to step on any plants. It was always so fresh and pretty in the garden. My dad always had a fence the length of the garden filled with sweet pea flowers. They smelled awesome, and were so pretty, I would always grab a few for the vase on my way back to the house.

I hadn't had this dish for a long time, and it was a real treat along side my sandwich for lunch...and brought back some fun memories,too!

Mom's simple dressing

2 Tbsp.vegetable oil ( I use olive oil)
1 Tbsp. vinegar
salt and pepper to taste

I added:
1 Tbsp. fresh minced parsley ( sometimes I add basil)
Mix and pour over tomatoes and cukes.

Yes, that does look yummy! And I've got a ton of basil so I will add that. :-)

Yum! Simple often is the best. I love your description of going to the garden to pick the tomatoes and cucumbers. I grew up in the country and spent my summer days barefoot walking down dirt roads and in the soft garden dirt. Sweet memories.
