Sweet potato salad


I've been buying alot of sweet potatoes lately. They are one of my favorites...especially sweet potato fries!

This salad is light and refreshing and a perfect side for a burger or sandwich. The pecans and celery add a nice crunch.

Pecan Sweet Potato Salad

6-7 sweet potatoes, cooked and cut into cubes
4 celery ribs, chopped
2 green onions, sliced thin
1/2 c. fat free sour cream
1 c. fat free mayo
2/3 c. pecans, toasted
Mix and chill.

It sounds good! I've never made potato salad with sweet potatoes and will have to try it.

All I needed to read was 'pecans' and 'sweet potatoes' and knew I had to pin this recipe! Two of my favorite things. :-)

Thanks for leaving a comment on my post about train rides. I've always it would be fun for us and friends to take the train either from St. Paul or from Tomah (cheaper from Tomah, just a bit of a longer drive from here to there.) What a great way that would be to brighten up a dreary February day!
