Lemon Cookies


My daughter is the BEST baker. Honestly, she could open up a bakery. She doesn't bake very often, though, but when she does....it's always a winner.


We went to visit a few weeks ago, and she made these awesome lemon cookies. She found the recipe at Fancy Road House.They were so soft and delicious with a mild lemon flavor....and the frosting was so sweet and creamy.
I'm not sure who ate more..Brent or ME!


Lemon Cookies with Lemon Cream Cheese Frosting

1 c. butter
1 c. sugar
2 eggs
2 tsp. vanilla
1 1/2 tsp. lemon zest
1/2 lemon juice
3 1/4 c. flour
2 tsp. baking powder
1/2 tsp salt.

Cream the butter and sugar. Add the eggs,vanilla,lemon juice and zest. Sift the flour, baking powder and salt. Add to the wet mixture. Wrap and refrigerate 1 hour.
Roll out dough to 1/2 in. thickness and cut with cookie cutters. Place on parchment lined baking sheets and chill 10 minutes.  Bake at 350 for 10 minutes. Cool completely.

Frosting
8 oz. cream cheese, softened
1 stick butter, softened
1/2 tsp. vanilla
2 c. powdered sugar
2-3 tsp. lemon juice

Beat the cream cheese, butter, vanilla and lemon juice. Add  the powdered sugar. Stir well and spread on cookies.

Thanks so much for sharing this recipe. It looks and sounds so yummy. Can't wait to try it (I'm not the world's greatest baker so I am always looking for good recipes)
