Almond Melt Away Cookies....12 weeks of Christmas

I adore almonds.

That's one reason why I like these simple almond flavored cookies.

Another is they are melt aways...I mean, all that butter and powdered sugar...they do just melt in your mouth. I guess that's why they call them that!!!

So you put the two together and that's why it's one of my favorite cookies.

I like to make them kind of small. Most of the cookies I make for the holidays I make smaller than usual so on a cookie tray one can have room to try several kinds. It just wouldn't be Chrstmas without lots of goodies to try!

Almond Melt away Cookies

1 1/4 c. butter, softened
3/4 c. powdered sugar
2 1/4 c. flour
1 tsp. almond extract
chopped almonds

Cream butter and sugar, beat until fluffy. Stir in almond extract. Add flour and mix well. Roll into small balls, and flatten with glass dipped in sugar. Top with chopped almonds and bake on parchment paper for 15 minutes at 325 until lightly browned on the edges.

I don't think that recipe could get any easier. Just a few ingredients and a few steps. Love it! That definitely comes in handy during the hectic holiday season.
