Oven mashed potatoes


Here's a Pinterest find....and a winner, I'd say!

It's nothing new really, but making mashed potatoes into individual servings and brushing the tops with olive oil and baking them does make a difference in taste. The sides and top get a lovely crispy like crust that just tastes delicious. The pinner suggested you could add anything you'd like really. I just added bacon, onion, and cheese. You could also mash the potatoes with butter, and use butter to brush the tops,too.

It was a nice side dish with our chicken last night, and one that I will definitely be repeating often!

Oven Mashed Potatoes

mashed potatoes
bacon bits
green onions
shredded cheddar cheese
paprika
olive oil

Boil and mash potatoes with a splash of milk. Stir in some bacon bits, green onions, and cheddar cheese. Spoon into ramekins or small pans and brush tops with olive oil. Sprinkle with paprika. Bake at 375 for 15 to 20 minutes until tops are crispy and golden.
