Lemon Bars....Pinned it and tried it



Last week I had some friends over for lunch, and I tried out this Lemon Bar recipe on them. I had pinned it from Pinterest a long time ago, as I love anything lemon!

They really liked it and wanted the recipe...there really isn't much to the recipe, only 2 ingredients! It couldn't be any easier. And they are very tasty, light and full of lemon flavor. I added some cream cheese frosting to half the pan and left the other half plain. 

I had to laugh at myself though, as once I had made them and tried them, I knew I 'd eaten them before, probably at some potluck dinners.  BUT I had never actually made them myself, so I'm glad I finally did!



Lemon Bars
1 box angel food cake mix, the one step kind
1 can lemon pie filling

Mix and spread in a greased jelly roll pan. Bake at 350 for 25 minutes.

That's it???!!! Good grief. Who knew. I love lemon, and I guess I especially love it in the spring.

Darn - couldn't find lemon pie filling in a can. Instead I bought Jello brand Cook & Serve pudding and pie filling 4.3 oz box in lemon flavor. I cooked the pudding according to the directions on the box and then mixed the hot pudding with the dry angel food cake mix. It expanded and filled the bowl (so use a big bowl). I put this mixture in a foil lined jelly roll pan and baked according to the directions here. It's in the oven now - can't wait to taste it!
