Pinned 'em tried 'em and loved 'em!

These are a great oatmeal cookie with a hint of pecans, a hint of cinnamon, and a hint of toffee all rolled into one. They are a perfect cookie for a nice cold glass of milk, or to throw into a lunch bag. 

The recipe makes a large batch, which was perfect for me to take to church, with even a small bag left to throw in the freezer. I always like to freeze recipes to check out how they taste after frozen. Lets face it, some stuff just doesn't freeze well! But I am happy to report these do.

One more cookie recipe I can cross off my list of the MANY I want to try!





Praline Oatmeal Cookies

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 1 cup firmly packed light brown sugar
  • 2 eggs
  • 1 cup granulated sugar
  • 1 teaspoon Vanilla 
  • 2 cups quick-cooking oats
  • 1 package (8 ounces) toffee bits
  • 1 cup chopped pecans

Mix the butter and sugars. Add eggs and vanilla. Stir in flour, salt, baking soda,cinnamon. Add flour. Stir in oats and pecans and toffee bits. Spoon onto parchment lined baking sheets and bake at 350 for 19-12 minutes.
