Blueberry Fluff Salad


Good morning everybody! I have another quick potluck recipe to share.

 I've seen it floating around on Pinterest,too, but you can find it in any church cookbook up north. Brent is not so crazy about the pineapple, so sometimes I just put a half a can or less in. Either way, it's a nice cool and creamy dish to serve with any meal. It's perfect for pot lucks,so easy to make, and travels well in a cooler.

If you have been reading my posts lately, you will notice a theme of Cool Whip. We do NOT eat Cool whip every day, nor every week, even though Brent would love that!

These are just dishes I have made throughout the summer, and am getting around to posting them now!

Blueberry Fluff Salad

8 oz. cool whip,  can use lite
1 can of blueberry pie filling, can use lite
1 20 oz. can of crushed pineapple, drained
2 c. mini marshmallows
1/2 c. toasted coconut

Mix the pie filling and pineapple. Fold in the cool whip and marshmallows. Sprinkle with toasted coconut. Chill 30 minutes or until serving.

I use whole berry cranberry sauce instead of pie filling and everyone loves it. Am excited to try it with blueberry pie filling.

My husband loves Cool Whip too. This sounds wonderful. Can't wait to try it!
