Baked Potato Topping


This is our favorite topping for baked potatoes, which we have quite often. Baked potatoes are so easy I often just throw them in the oven with whatever meat I'm having.

But it's easy to get tired of them if you make them that often, so I like to add different toppings to jazz them up. This one I found in a Taste of Home magazine a few years ago, and it's been a regular ever since.

I get hungry just looking at it...melting down that fluffy mound of potato!



Potato Topping

2 Tbsp. bacon, chopped
4 large baking potatoes
1/3 c. butter,softened
4 green onions, sliced
1/4 c. mayo
shredded cheddar cheese

Bake the potatoes. Mix the butter, mayo, onions and bacon. Set aside. Cut an X on the top. Spoon some of the topping on and sprinkle with cheddar cheese, let melt a minute before serving.

This is delicious. I don't like mayo so I would substitute sour cream for the mayo.

We love baked potatoes! When I was a kid my Mom used to empty the potato out and baked the skins for us kids with goodies like these - brings back great memories!
