Hawiian Pasta Salad


School's out and the warmer weather is here...it's time for some cold pasta and potato salads!

I really like this one...the combo of the salty ham and sweet pineapple in the creamy dressing is delicious. I serve it along burgers or sandwiches, and often on it's own. It's a pretty salad with the red pepper, yellow pineapple, and green onions!


Hawaiian Pasta Salad 

8 oz. Rotini, cooked and drained
14 oz. can pineapple tidbits, drained, reserve juice
1 red pepper, chopped
2 c. chopped ham
green onions to taste

Dressing:

1/2 c. mayo
1/4 c. sour cream
1 Tbsp. Dijon ,mustard
1/3 c. pineapple juice
1 tsp. honey
1/4 tsp. garlic powder
black pepper to taste

Place salad ingredients in a large bowl. In a small bowl mix the dressing ingredients. Toss to combine. Refrigerate.
