It's Monday...time to share one of my moms recipes....
One of my favorite cookies that my mom made when I was growing up were Ginger Cookies. I can't tell you how many times I grabbed a handful from the cookie jar after school and sat down at the kitchen table {covered with a red checked tablecloth} to tell her all about my day! I loved to dunk them in a glass of cold milk, while mom dunked hers in coffee. It was always warm and cozy in the kitchen, a perfect place for a nice chat!
I haven't made these in awhile, since they are so hard for me to eat just a few. But last weekend when I was Christmas shopping there was a craft fair in the mall. It was put on by local church groups and there were a ton of tables set up. At most of the tables, they were selling their church cookbooks, and some were also selling baked goods. I saw some plates of snow capped ginger cookies and immediately thought of making some using moms recipe.
While I love them just plain, the way mom used to make them, I couldn't resist dipping them into some white chocolate!

Snow Capped Ginger Cookies
1 c. brown sugar
1/4 c. molasses
2 1/4 c. flour
1 tsp. ginger
1 tsp. cinnamon
1/2 tsp. cloves
3/4 c. shortening
1 egg
2 tsp. baking soda
1/4 tsp. salt
Mix the sugar and shortening. Add the egg and molasses. Stir in the rest of the ingredients. Chill 1 hour. Shape dough into 1 inch balls and dip in sugar. Place balls on greased cookie sheets and bake at 375 for 10 minutes. Cool completely.
Melt 1 c. white chocolate chips and 1 tablespoon shortening. Dip half of the cookie into chocolate and place on waxed paper.
