It was such a cold, dreary, rainy day I felt like making some good old comfort food.... so I dug out a mini meatloaf recipe. It's quick and easy..ready in an hour. I love the slightly sweet topping! These taste great warmed up in the microwave the next day too. I found this recipe a long time ago on allrecipes, and make it quite often.
Brent likes this meatloaf too, but actually prefers my recipe...which is just thrown together with whatever I feel like that day! It turns out different every time. I do always use onions and soft bread cubes{this one has oatmeal} so maybe that's what he means, I'm not sure!
I agree there is nothing better at rainy days than a good old comfort food.

ReplyDeleteSince there is just the two of us, I always make my meatloaf as individual burgers and cook them on my countertop grill. I haven't made them in a while though. Thanks for the reminder, I think I will make them tonight.
