Mini Meatloaf recipe


It was such a cold, dreary, rainy day I felt like making some good old comfort food.... so I dug out a mini meatloaf recipe.  It's quick and easy..ready in an hour. I love the slightly sweet topping! These taste great warmed up in the microwave the next day too. I found this recipe a long time ago on allrecipes, and make it quite often.

Brent likes this meatloaf too, but actually prefers my recipe...which is just thrown together with whatever I feel like that day! It turns out different every time. I do always use onions and soft bread cubes{this one has oatmeal} so maybe that's what he means, I'm not sure!

  2. Meatloaf is one of those things I never get right! My mom used to make it all the time with a red sauce too - this looks awesome!

  4. Since there is just the two of us, I always make my meatloaf as individual burgers and cook them on my countertop grill. I haven't made them in a while though. Thanks for the reminder, I think I will make them tonight.

  5. I cooked these tonight and my husband ate 3 of the mini ones. I was shocked. He said they were delicious and he can't wait to have them. It was the perfect portion size for a family of 3. Awesome recipe! Thanks!
