I was looking through my Cuisine at Home magazine and came across this terrific recipe for homemade granola. Actually I found alot of recipes I'd like to try, but most of them were pretty high in fat. I'd like to shed a few pounds...so they will have to wait!
This recipe didn't seem too loaded in fat.{ especially if I don't eat too much} I like to put some on top of non fat yogurt. I love the crunch! It's also good on top of oatmeal, ice cream....just about anything. Brent likes a big bowl with milk...and I noticed he also likes to grab a handful right of the jar for a snack, too.
This recipe is full of crunchy oats and nuts, chewy cherries, and toasted coconut.... all with a sweet maple cinnamon flavor. I'll be making this often. It's delish!

Toasted Oat Granola
{This granola becomes more crisp as it cools.}
Makes 12 servings {6 cups}
Toast:
2 1/2 c. old fashioned oats
3/4 c. slivered almonds {I used pecans}
1 1/4 tsp. cinnamon
1 tsp. kosher salt
Combine:
1 c. dried cherries
1 c. sweetened shredded coconut
1/2 c. packed brown sugar
Stir in:
1/2 c. maple syrup
Preheat oven to 375. Line a baking sheet with parchment paper. Toast oats, almonds,cinnamon, and salt together in a large skillet until fragrant, 7-8 minutes. Combine the cherries,coconut,and brown sugar in a large bowl, add toasted oat mixture. Stir syrup into oat mixture to combine. Spread onto baking sheet and bake 18 minutes stirring halfway through baking.
