Mondays with Mom, Corn Flake Cookies
Time for Mondays with Mom.....a post sharing recipes and memories of my mom.
My mom was always making some kind of cookie. She kept the cookie jar full of cookies. I remember reaching in expecting to grab a cookie and instead pulling out a piece of bread! She put the bread in there to keep the cookies soft. It worked!
This cookie was one she made often. It's really like a chocolate chip cookie, with a bit of a crunch with the addition of corn flakes. She always kept a box of Corn Flakes and a box of Rice Krispies on hand. She used both cereals for many recipes, besides for breakfast. I don't ever remember her buying us kids cereal with sugar. She kept a sugar bowl on the kitchen table if you wanted to sweeten your cereal.
In later years, she always kept a box of Chex cereal on hand,too. Some of my kids favorite memories when they were little were the nights they spent at Grandma's. She would make them a special bedtime snack. I have NO idea where she came up with this idea, but she would butter each little chex square and set them on a plate. The kids LOVED this. I can see her now, painstakingly buttering each one, the kids eating them as fast she buttered them!
I haven't made these cookies for years...Brent was happy when he saw them. He loves chocolate chip cookies, and loves the crunch of the corn flakes in these!
Here's her recipe for the cookies:
Corn Flake Cookies
1 c. brown sugar
1 c. butter
2 eggs
2 c. flour
1/2 tsp. cream of tarter
1 tsp. soda
1 Tbsp. hot water
3 c. corn flakes
1 c. chocolate chips
1 c. chopped nuts
Cream butter and sugar. Add eggs, mix in dry ingredients. Add chocolate chips, nuts, and corn flakes. Bake at 350 for 10 minutes.
We used to make cornflake cookies all the time too, but I never thought to add them into a chocolate chip cookie. Sounds like a delicious idea.
ReplyDeleteI haven't thought of adding corn flakes in cookies so as to become more crunchy. Aren't moms great or what!
