I just made a few changes to the recipe over the years. I always add a bit more pasta to the pot, and add another small can of tomato sauce...and more burger...about another half a pound or so. We like alot of meaty sauce!
I also like to bake it in two glass pie pans. We usually eat one pie and have the other for supper the next day!
Southwest Spaghetti Pie
1/2 c. milk
1 egg
1/3 c. chopped onion
3/4 c. chopped green pepper
1 clove garlic, minced
1 Tbsp. chili powder
1/2 tsp. salt
1/2 tsp. cumin
1/2 -1 tsp. oregano
1/4 tsp. pepper
1 lb. hamburger
2 8oz. cans tomato sauce
1 c. shredded Monterrey Jack cheese
1 c. shredded cheddar cheese
Mix the egg and milk together and set aside. Cook the spaghetti ,drain and stir the milk mixture into the hot pasta. Pour into a 3 qt. buttered baking dish.
Meanwhile brown the burger with the onion, garlic, and green pepper. Stir in the cumin, chili powder, salt, oregano, and pepper. Cook and stir for 2 minutes. Stir in the tomato sauce. Bring to boiling, reduce heat and simmer 2 minutes. Pour over pasta and top with cheeses. Bake at 425 uncovered for 10 minutes until bubbly.

I haven't tried it this way before, normally I used my left over spaghette add some more sauce, layering it into a baking dish and then add the cheese and freeze until we need it. I'm going to try your version next time we're hungering for some pasta. TFS!
ReplyDeleteYes, this looks like a family favorite for sure! And I'm with you: I like to make two lasagnas at a time, freezing one for later. Have you tried freezing this? It looks delicious, the kind of meal I love on a cold fall night!
ReplyDeleteThis was a recipe I got in 1981 while working the VA hospital here in vancouver, washington, now it is domicilary and testing site for ptsd veterans and soon a homeless veterans living home...It consisted of spaghetti boiled, 2 eggs and some cheese stired together put into a pie plate, either home made spaghetti sauce with meat in the mix or purchased put in the middle and fresh mozarella swirled in the center baked with aluminum foil over it then taken off about 5 minutes before done in a 350 or 375 degree oven, a lady made it for me when I was leaving my job, oh, my was it ever good, I even had some to take home with the recipe attached to my going away present from her..Your recipe sounds very similar save the cheeses..yummmmo. love your blog, remembering ten years ago, our only child lives in NYC the city that to me got the very worst of the attacks..she says the people are fiercly protective, kind and will never forget what happened, we plan on going to a memorial at the VA site and also we will be talking to her soon..Never ever forget the terriosts did not win nor will they ever..ciao!mjs
