Subway Sweet Onion Sauce

One of my favorite subs is Subways sweet onion teriyaki chicken. I found the copycat recipe in my America's Most Wanted Recipe Book.

Lucky me! It was a winner! VERY close to the original sub.

First I made the sweet onion sauce and set it aside. {If you look close it's in the little jar behind the sub.} Then I marinated three chicken breasts in teriyaki sauce for a couple hours in the frig. {I went and took a nap.}

About a half hour before supper, I cooked the chicken on the stove top. I thought about grilling them, but I was too lazy.

I sliced some wheat sub buns I bought at Wally's and piled on some of the warm chicken I had chopped up, then added some lettuce, and tomato. Then I drizzled it all with some of the sweet onion sauce.

Oh... it was good!

AND there's even some left for tomorrow!

Sweet Onion Sauce

1/2 c. light corn sryup
1 Tbsp. minced white onion
1 Tbsp. red wine vinegar
2 tsp. white vinegar
1 tsp. basalmic vinegar
1 tsp. dark brown sugar
1 tsp. buttermilk powder
1/4 tsp. lemon juice
1/8 tsp. popppy seeds
1/8 tsp. salt
pinch of pepper
pinch of garlic powder

Combine all in a sauce pan and cook over medium high heat for 2 minutes until mixture comes to a boil. Whisk well, and cool. Refrigerate 30 minutes before serving.
