Strawberry Cheesecake Salad


This recipe came from Time for Supper .....the name drew me in and I had to make it. After all, my hubby loves cheesecake, {OK I do, too} and it looked like a great recipe to make a lighter version of.

I changed the recipe by using fat free, sugar free cheesecake pudding mix, low fat strawberry yogurt, and lite Cool Whip. I also used only strawberries. The original recipe added bananas and mini marshmallows, which also sounds good, but I was hungry for strawberry cheesecake. I made a smaller batch,too.

And it worked! It tasted just like strawberry cheesecake.

We loved it..... so creamy, full of strawberries, simple to make, just a few ingredients, and low cal!!!!!!

I'm thinking next time I may sprinkle some graham cracker crumbs on top.....







Strawberry Cheesecake Salad

 6 oz. lite cool whip ( I used most of an 8 oz. container}
1/2 package fat free sugar free instant cheesecake pudding mix {dry powder...I guessed at about half, I didn't measure}
1 and 1/2 containers low fat strawberry yogurt (6 oz.size}I ate the other half!
1 to 2 lb. Sliced strawberries (depending on how creamy or fruity you like it, I used about 1 and 1/2 lb.)

Mix the cool whip, cheesecake pudding mix, and strawberry yogurt. Refrigerate 1 hour. Add sliced strawberries before serving.

  3. This recipe just screams "summertime at the cabin". Will definitely have to bookmark this one, as I love to try new recipes on our family weekends up north at our cabin in northern Minnesota. So glad I stumbled across your blog!
