Cookie Pizza

And SO easy!


When you need a quick dessert or treat to pack in lunches but don't feel like putting too much effort into baking, try this pizza.

It's awesome when it's fresh out of the oven, so gooey and delicious. But we also like to warm up slices in the microwave and add ice cream on top.

The dough is a basic oatmeal cookie dough. You can put in anything you have in your cupboards for the toppings ...and add as much or as little as you like. It turns out a bit different every time I make it, depending on what I have on hand.

But it ALWAYS turns out scrumptious!
 
Cookie Pizza

1/2 c. butter, softened
3/4 c. brown sugar
1 egg
1 1/2  tsp. vanilla
1 c. flour
1 c. quick oats
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
 M&M's
chocolate chips
chopped walnuts
coconut

Cream the butter and sugar. Beat in the egg and vanilla. Add the dry ingredients and mix well. Add some of the M&M's, chopped walnuts, coconut and chocolate chips. Stir well and press into a greased pizza pan. Top with more M&M's, coconut, walnuts, and chocolate chips, and lightly press them down. Bake at 350 for 18-22 minutes until golden brown. Cut into wedges and serve.

  4. Are you kidding? Your leaves are changing color already? Well, actually, we are getting a little yellow, but nothing else yet. I do expect it to be early this year, however, because it's been such an odd year! Until our kids grew up and moved on, we used to have an 'early Thanksgiving' the second week of October because that's when the weather was perfect and the leaves were gorgeous!
