Good morning all!
And a good morning it was for us with this special treat for breakfast.
This recipe came from a new church cookbook I bought...I've been finding lots of good recipes to try.
The things I liked about this were, well, first and foremost, it tasted wonderful. Warm carmel with cranberries and cinnamon....what an awesome combination! It was also easy to make, and I love make ahead recipes.
Even though I halved the recipe, there's just enough left for my lunch today..can't wait!
Rachel's French Toast
1 c. brown sugar
3 tsp. cinnamon, divided
1/2 c. butter, melted
3 granny smith apples, peeled and sliced
1/2 c. cranberries or raisins
1 loaf French bread cut into 1 in. slices
6 large eggs
1 1/2 c. milk
1 T. vanilla
Combine the brown sugar and 1 tsp. cinnamon in a 9x13 baking dish. Add butter,apples and cranberries. Toss to coat. Spread evenly over bottom of dish. Arrange bread slices on top. Mix eggs,milk, vanilla, and 2 tsp. cinnamon and pour on top of bread, soaking bread completely. Cover and refrigerate overnight. Cover with buttered foil and bake for 40 minutes at 375. Uncover and bake 5 minutes. Remove from oven and let stand 5 minutes. Invert each piece on a warm plate. Serves 6-8.
