Brent's a big fan of these. They are really delicious. I roast potatoes ALOT. Usually I just dump some olive oil and some type of seasoning on them and throw them in the oven, though.
This is almost as easy, and the mustard gives them a nice flavor. I'm not sure where I copied down this recipe, but it's a good one!
Dijon Roasted Potatoes
4 potatoes, quartered
1 tsp. olive oil
2 Tbsp. Dijon mustard
3/4 tsp. paprika
1/4 tsp. thyme
1/2 tsp. salt
1/4 tsp. pepper
Mix all the ingredients and toss with potatoes. Put on a greased cookie sheet and roast at 425 for 30-45 minutes. Stir twice. 300 cal. 1.8 fat Serves 4.
Laurie, these sound delicious!
ReplyDeleteThese sound really good! Dijon mustard is really good slathered on chicken breasts too!
ReplyDeleteI can imagine how flavorful these are with the Dijon! I don't make potato a lot....but this would be a recipe I can't wait to try out. :)
