I made a double batch of these goodies. I'm so glad I did, they are fantastic!
Some are for church, and some to freeze for us. I like to package them 2 in a bag so we can grab them from the freezer in the morning to throw in our lunch. They freeze really well, and are still soft and chewy in the center.
We can't resist the combination of nuts, cranberries, chips, and cinnamon!
Cranberry Vanilla Chip Oatmeal Cookies
1 c. butter, softened
1 c. brown sugar
1/2 c. sugar
2 eggs
1 Tbsp. honey
2 tsp. vanilla
2 1/2 c. quick oats
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. dried cranberries
1 c. vanilla chips
1 c. chopped nuts, optional
Cream the butter and sugars, Add eggs, honey,and vanilla. Stir in the salt, cinnamon, and baking soda. Add the flour and oats. Stir in the cranberries, chips, and nuts. Bake on greased sheets at 350 for 10 to 12 minutes. Let cool on sheets for 2 minutes before removing to racks.
Vanilla chip??? Where have these been hiding? That's a great idea. Look delicious!
