I have one more mix in a jar recipe to share....the last jar...that my daughter gave me for my Birthday.
It's Cookie Pancakes!
It's Cookie Pancakes!
They were so good!
They were even better warmed up next day in the microwave. They DID taste like a pecan cookie! Every bite had pecans in it, which both Brent and I love. With butter and syrup, they were a perfect for brunch along side some scrambled eggs.
I will definitely be making these again, and SOON!

1/4 c. sugar
3/4 c. powdered sugar
1 c. pecans, chopped fine
1 c. milk
1 egg
2 tsp. vanilla
2 Tbsp. butter, melted
Mix the dry ingredients in one bowl, and the wet in another, Add the wet to the dry and stir until just combined. Batter will be lumpy. Fry in greased skillet. Makes 4 servings.
