Grant's Chocolate Chip Cookies


I saw the recipe for these cookies on the Rachel Ray Show one day, and had to make them. They looked so soft and chewy, just my type of cookie. Rachel made them sound so good, and she looked like she was in heaven when she ate one. That's all it took and I was in the kitchen!

I hadn't made cookies where I had to process the oatmeal before, so that was an extra step. Actually, there were quite a few extra steps, now that I think of it. The recipe called to beat for 6 minutes, and also to add the flour mixture 1/4 c. at a time. Then you sprinkled kosher salt on top after baking them. So the cookies took a bit longer to make.

The good news is, they were worth it! Nice and soft in the middle, one cookie after another...yes I ate several, fresh from the oven! I blame it on the kosher salt...the sweet and salty combo is irresistible!


Grant's Chocolate Chip Cookies
Rachel Ray show

1 1/2 c. old fashioned oats
3 c. flour
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 tsp. kosher salt 
1 1/4 c. butter, room temp
1 1/2 c. brown sugar
1 c. sugar
1 tsp. vanilla
2 large eggs
2 1/2 c. chocolate chips
Process the oats until coarse.  Add the flour, baking soda, baking powder, and salt. In another bowl, mix the sugar and brown sugar. Add the butter and beat until light and fluffy, about 6 minutes. Add the eggs, and vanilla and beat well. Add the dry ingredients, 1/4 c. at a time,beat all together for 2 minutes. Add the chocolate chips and bake at 350 for 6 minutes, on parchment paper, until golden brown and slightly soft in the middle. Sprinkle with some kosher salt, and let cool on sheets  before removing.

    Warning! You going to eat all the cookies all by yourself, without milk! Watch out, you're going to gain weight. LOL! But I love them!
