Time to dig out this old tried and true recipe! I needed something for a pot luck, and this is quick, freezes well, and is SO moist and tasty.
I actually made four small loaves instead of the 2....they are such a nice size. Besides, then there's one to keep at home!
Lemon Poppy Seed Bread
1 lemon cake mix
4 eggs
1 (3 oz.)box instant lemon pudding
1/2 cup oil
1 cup water
1/4 cup poppy seeds
Mix all together and pour into 2 greased 8x4 inch bread pans. Bake at 350 for about 25 minutes, use the toothpick test to make sure they are done.
