Fruit Tarts


These were as much fun to make as they were to eat!

They were also very simple to do. I really like the idea of being able to make the crusts ahead of time and then just assembling them quickly before serving them,too.



And the taste....just like summer....so refreshing with the tangy cream cheese and fresh fruit! They were a real treat on such a wintery day.


Fresh Fruit Tarts

1 1/2 c. flour
1/4 c. sugar
1/4 tsp. salt
1/2 c. cold butter
1 egg, beaten

Filling:
4 ounces cream cheese, softened
1/4 c. sweetened condensed milk
2 T. lemon juice
assorted fresh berries
2 T. apricot preserves

Combine the flour, sugar, and salt. Cut in the butter until mixture resembles coarse crumbs. Add egg, mix with a fork until blended. Shape into a ball and refrigerate 1 hour until easy to handle.

Divide dough into 6 pieces. Press each portion into 6 greased  4 1/2 inch tart pans. Bake at 30 for 15-20 minutes. Cool 10 minutes and remove from pans.

In a small bowl, beat the cream cheese until smooth. Beat in the lemon juice and sweetened condensed milk. Spoon 2 T. into each tart. Arrange berries on top. Melt preserves in microwave and brush over berries.
