Every year we have a Christmas potluck at work and I'm able to snag a few good recipes. This one is the winner!
Light, fruity, and full of good-for-you veggies, this is one refreshing salad. Everyone asked for the recipe, including me!
I made it as soon as I got it.
I'm no fool.
Christmas Mandarin Orange Salad
1/2 c. slivered almonds
3 T. sugar
Cook over medium heat until the almonds are caramelized.
Lettuce: Tear bite size pieces of romaine, spinach, red leaf, what ever you like. {I used a spring mix}
1 c. chopped celery
1/2 red, orange, and yellow peppers, chopped
2 whole green onions, chopped
1/2 red onion, sliced
3 small cans mandarin oranges, drained
pomegranate seeds, reserve some for garnish
baby portabella or button mushrooms,sliced
Dressing:
1/4 c. extra virgin olive oil
1-2 T. chopped parsley
2 T. sugar { I used splenda}
2 T. red wine vinegar
4-5 drops of Tabasco
Mix lettuce, peppers, onions, mushrooms, oranges, and pomegranate seeds in a bowl. In a separate bowl whisk the OO, parsley, sugar, vinegar, and Tabasco. Add dressing to lettuce and toss. Garnish with almonds and reserved pomegranate seeds.
